Your immune system isn't going to get immune to salmonella or e coli. If you want to be a slob and brag that you didn't get sick, it's fine, but don't pretend it's anything better than luck. Most raw food is pretty clean anyway. It's the rare exceptions that make life interesting.

If you cook animal products and also serve raw dishes you probably want to be pretty scrupulous. Cross contamination can make you sick.
If you''re vegan and/or eat only cooked food you can be a bit more slack without much in the way of repercussions.
Cleanliness keeps away the roaches.
Not that there's anything to fear from roaches, but their presence is pretty unsettling. Especially knowing that they could get into whatever's lying around.
