Sear them in a pan in a bit of olive oil and pepper until just browned, then reduce the heat and add 1/2 cup low sodium chicken broth and 3-4 tablespoons of balsamic vinegar. Cover and let that reduce down until it becomes thick enough to be a sauce.
While that's happening, get a whole head of garlic and cut the very tip off so the cloves are exposed. Rub olive oil into every part of the cloves, cover it with foil, and bake at 400 for 40 minutes. Once it's soft, either squeeze the whole thing into the chicken or use the individual cloves as a spread.
make a mexican-style marinade (oil, vinegar, hot sauce, garlic, etc), cook it fajita style (hard in a cast iron pan), slice and eat over salad with taco ingredients (avacado, a few tortilla chips, tomato, etc)
This technique that Sir Jamie is demonstrating does a great job on chicken. Get some of those microwaveable steam-able bags of veggies like broccoli or beans and as soon as they've been zapped in the microwave and drained of any water they've let out in the bag, dump them with the cooked chicken and the delicious gravy of chicken juice, olive oil, and lemon juice. Then maybe a add a little parmesan cheese.
you can cook chicken. Put some herbs and shit on it, bake it, voila. You have chicken. It's not rocket science.
