Love my thermapen but haven't used it for candy yet. I imagine it's not a bad choice, given that it'll give a read in under 3 seconds.
Best gadget right here though. Knife skills are important but a mandolin slicer will make some tedious tasks so easy
I use a thermometer where the probe is on a cord and can be put in the oven/pot for most things, a cheap candy thermometer for candy/deep frying, and an infrared thermometer for things like home brewing or poaching.
I have a cheap probe thermometer I bring to work, and could do pretty much every job.

i also only used it to cut onions cause i hate cutting onions , it hurts my eyes
i'll have to try it again not for onions and without the hand guard.. i han't given up on it yet..

Try adjusting the thickness of it, might help a little. Onions, potatoes, carrots, and other denser veggies are a bit tough to get going, but persevere Anon, I believe in you

I've had one for 5 years, great thermometer. for meat they had a great alarm probe thermometer but discontinued it for something worse.
