What's the best way to receive money from people online without giving out any information?

Probably bitcoin. Anyone can get a bitcoin address and obtain bitcoin.

The problem is then selling it for fiat anonymously.

You need to create an account, verify your ID, etc.

Buying cryptos is actually pretty hectic if you don't already own one.
