Build my own with a decent EVGA 850w G2 PSU and had no problems at all.

For video editing you're going to want to have a bit more RAM. I'm guessing you're pretty casual, so 16GB of ram should do it just fine. And RAM is quite cheap aswell. You're not going to need anything more powerful then a Asus 960 4GB STRIX DC2 OC (€260 currently where i live). As for a PSU, get one that is atleast 80+ certified. 600W is good enough. As for CPU, i'm guessing video and music editing programs can utillize multiple threads/cores so a quadcore i5 with hyperthreading will do. If video editing is cpu intensive aswell, then step it up to an i7(google it). Don't bother with buing an unlocked CPU, you're not going to clock it anyway, you don't have those skills, else you wouldn't be asking for help here. Choose a fitting motherboard with a good soundcard built in. Or if you're a proper audiophile, get a pcie soundcard.

Raid 6 would give you more redundancy and 10TB of space to work with insted of 6TB. And reads/writes are quite fast on raid 6 aswell.

yeah, 2 disks can fail, 2 of which ever disk, doesn't matter. And even if 2 disks happens to die at the same time, the raid still functions. You just need to replace the bad disks, and you're back to full redundancy as soon as they've rebuilt.
As for raid 10, if 2 disks that happend to be mirrored fail, your raid fails. It's over.
