The problem with a lot of manga and anime is that it overstays it's welcome and strays from what made originally so appealing.

I liked Naruto when he was just a training ninja caught up in something bigger than himself. Bleach was also good when it was just about the link between life and death.

Attack on Titan as an anime is pretty good as it stands, but it has not hit the best point yet, mostly due to all the unanswered plot points in the show. One piece is God tier shonen Manga, arguably THE BEST long running, the anime was alright, then the time skip happened and the anime had issues with the episodes catching up to the chapters and low budget (bad studio). To make up for this they made scenes drag out and added filler, it sucks, the new episodes cover a full chapter that takes 5 mins to read, overly stretched out shit now

Kenichi: The Mighter Disciple, is still my favourite anime.
I've never seen the detail the animation goes into for fights in anything else, the characters are great and well developed as is the plot, and it's carries a great message.
It does carry some common anime flaws; it's can be cheesy and unrealistic at times (beyond the suspension of disbelief) and it's an Ecchi anime, but despite those flaws it's still the one that stick out most for me.
I think it's a definitely God-tier anime.
