He's working on three games at once because he's the writer/designer/QA for each, and each game has a separate team.
It takes a person barely any time to write up a design document for a game if they're good at it, same for writing dialogue. He can write the documents, hand them out to the musician, programmer, artist, voice actors, and then while they're doing their stuff on game #1, he can go to game #2, do the same, game #3, do the same. Then by the time he's done with game #3, everyone on game #1 is done with their chunk of work he's given them, so he repeats the process, cycling through the games without causing delays and getting writing done for them at the same time.
Last I heard he's working something like 10 hours a day, 6 days a week on these games. He once told me that he basically has no life outside of one day a week he spends with friends and family, the rest of the time he's at his home working on games. Believe it or not, he really does take a lot of pride in his games and wants them to be the best games possible.
