It'd kind of make sense considering Bake consists of Crab, Monkey and Snail but I'm guessing that's Vertical's line of thinking but I really would've liked to see it all in one gigantic volume.

I'd like to eventually get the Strike Witches novels by Yen Press, with the new season coming out sometime next year it'd be great if we got the original novels and maybe some others like the one about Hanna in Afrika.

you're implying that we had every other novel translated. So far, I've seen Kizu and Neko Kuro completely translated and the others have parts of them translated, so it's not that bad of a deal. You can also buy them in the original Japanese if you're that desperate to read them.

Both Bake volumes are over 400 pages long. The only other volume with over 400 pages is Koyomimonogatari, in fact separating Bake in three makes it around 280 pages long which is just the average of Second Season.
I bet Koyomimonogatari would be separated in two if they ever get there.

Because "Senjyougahara" is designed to be useful for the Japanese to translate back into kana while "Senjougahara" is designed to give westerners a good idea of how her name is pronounced and an English release targets westerners.

Each volume only has one illustration before chapter 001. Books with several stories had one each.

for the first chapter of each story, he the star character about roads, metaphorically, and what road they follow in life, and then he goes on a bit of a tangent or rant about that
The story is more realistic. Middle schoolers deciding to believe in ghosts despite absolute proof to the contrary because it's fun is believable, as is Tsukihi's frustration at the situation. Plus, the ending is touching rather than some dumb punchline.
