Reasons I see why people would like it:

Yet I didn't enjoy watching it at all. It was just so boring. Basically the premise spoils the entire joke and it gets so incredibly predictable and repetitive, for example:

How do you know that? Yes, there will always be people who want to show off with faux knowledge in order to appear smart, but in that case you have to look out for examples. That's the difference between trying to sound smart and simply not being stupid.
Hibike does have some very beatiful shots which are incredibly enjoyable to watch like the infamous Reina smile, many scenes on top of the hill, that one shot where Kumiko makes her decision to be with her new band members after the march, etc.
When people say they enjoyed the cinematography, it's probably because they enjoyed the cinematography and nothing else.
Also you mentioned that you didn't care about the writing. Do you actually realize that bad writing makes a show much less enjoyable and likely turns it into shit? Bad writing can mean a couple of things, like plotholes, characters acting out of character, too many convenient things happening, etc.
When things stop making sense, are stupid in general or just way too unoriginal, you enjoy it much less. This is why people who only watched few series usually like stuff like Elfen Lied or Mirai Nikki, since it's 'new' to them and they don't realize all the nonsense happening. Additionally, they may not realize that the show they like may just be extremely forgettable within the sea of series that exist.
This is why shows with bad and uninspired writing usually suck. The only way to enjoy them is the usual 'just turn off your brain' mentality, which might help you enjoy watching trash, but it'll still be trash.
And this is why shows with talented people who know their shit are more likely good.
You separate visuals, camera angles and writing from enjoyment, when in reality they're all part of the enjoyment you get from watching a show. Just as 'fun' is only a part of the overall enjoyment.
