From what I can remember the snake is analogous to the moon. The changing phases of the moon were considered representative of a snake changing its skin. The snake was considered an "immortal" animal because of this renewal. The phases of the moon were used as important markers in the calendar cycles of the seasons and its endless regeneration was displayed on the ground in the form of the world "dying" in winter and "resurrecting" in spring.

The snake is also a living phallus so there is something in that as well.
