Whenever I make cookies the dough always ends up being super thick, and pretty dry. I am generally making double chocolate chip cookies but it still feels wrong.

There was a problem in my household for years where many batches of cookies would come up flat, super crunchy, and horribly burned. We were convinced that either a) we baked them too long or b) we were cursed.

But the issue was that we were just using a recipe that was for the wrong altitude. We lived near the mountains, so we we're above sea level. There's generally extra info hidden at the bottom of instructions on packages for areas like that.

If you've ever worked in a real kitchen you'd know that gloves only feed bad habits and are really inefficient. When doing knife work with gloves on it's impossible to properly use the knife, the knife catches the glove/ the glove gets cut where if I was knuckle-to-knife nothing would have happened.When i worked fine dining we didn't use gloves and each station had a sink. After we touched any food not relevant to the current dish we'd wash up. Now I work in a kitchen that you have to wear gloves in and nobody washes their hands even the once every 5 glove changes the chef tries to enforce. When I got there everyone was genuinely concerned fused when I would wash up in-between different dishes.

TLDR: gloves just make kitchens lazier, dirtier, and there's alllllooottt more cross contamination with gloves than a consistently washed hand.

As "an chef", I'll tell you this much, 3hours in the freezer after you finish dough, then leave in fridge overnight or at least 6 hours. this gives the fat and eggs time to incorporate itself into all of the dry ingrediants in your dough. also browning the butter the night before and the cooling again, then softening before you whip up, gives the cookies that next level of flavor and richness, as well as an incredible aroma. if needed, i can give you my bakery recipe for amazing chocolate chip cookies, but fair warning these things take time, if you want cookies in 20 min or so, your better off just buying ready dough to keep in the freezer.

I saw a really good video about safety in the workshop, and adding more and more safety devices is counter productive. People just end up thinking that nothing bad will happen because the device or protocol is there, so they are less focused on the job (which might end badly).
I think it's the same thing in the food industry : maybe the guy doesn't wash his hands, but having him put gloves on don't mean he'll either change or wash them. It's just a cheap insurance against some lawsuits.
