Twisted Metal 2 because it was the Street Fighter of car combat. V8 suffered from framerate issues IIRC. V8 2nd was pretty great but not nearly as suited for competitive play.
TM2, hands down. V8 was fun and all, but I preferred the tighter controls and art style of Twisted Metal 2.

Pretty sure in TM if you hold left or right while still, you don't rotate. And your turning speed isn't constant while moving either.

I never said it was more realistic, just more playable than getting rolled around every minute because "muh physics engine" that V8 had to flaunt.

Vigilante 8. TM2 is a lot of fun, but I don't think it's even in the same league as Vigilante 8.

On N64 and Dreamcast you can happily settle for Vigilante 8, it's a great game.
On the Playstation, where there's more choice, Twisted Metal 2 for sure.
Vigilante 8's a sweet second-place alternative, and there's Rogue Trip if you're desperate for something else, even if it's not on the level of the other games, but TM2, Black, and Head-On are the kings of the genre on console and handhelds.
