That's my first mod on a console, the hardest by far and, my god, that was scary... And I have my fair share of mods under my belt.
Just get some sacrificial boards with smd chips on it, I used old controller boards from broken hardisks I had around and practice leg lifting.
It's kinda easy but takes firm pulse the first time:
1º) Try to wedge a xacto blade between the pin you want to lift and the next.
2º) Touch the chip leg, touch it do not push it down, just lay the solder on it and let the heat transfer and melt the solder.
3º) Start to apply pressure to the blade and wait to the chip leg to move and lift it from the board.
4º) Straitgh it with a flat noosed plier and you are good to go.
The most difficult ones are the region protection chip and the PPU1, the onther is easier because the leg you need to lift it's on the side and it's easy to lift with the blade.

As someone who never owned a Sega console growing up, I didn't even realize Sega consoles were a thing as a kid, what are the must play games for the Genesis?
I recently obtained a Genesis in a console lot that didn't come with any of the cords, controllers, or games so I don't even know if it works. Figured I'd see what's good for it just in case it does work.
It probably works just fine, sega genesis' are pretty durable, much more so than nintendo systems at the time. Get the obvious games first, the sonic titles, castlevania, contra, it'll give you a good feel for what to expect on the system. Also, judging from how fucking filthy that thing is, the cartridge slot has probably seen some neglect. Use some isopropyl alcochol on a cartridge's pins, rapidly insert and remove it from the system and clean it off - should be working well after that.

It depends on what you like to play but a few great games are the streets of rages, splatterhouses, gunstar heroes,raiden trad, truxton, ristar, turtles hyperstone heist, caste of illusion, beyond oasis, crusader of centy, musha, all the shinobi's, tin head, rocket knight, sparkster, castlevania bloodlines, phantasy star, shining in the darkness, el viento, batman, Michael jacksons moonwalker, trouble shooter, the Disney games, the outrun games, ghouls n ghosts, and if you have never played it sonic.
Lots of good shit, 700+ game library.

Why did Nintendo use ROM cartridges instead of floppy diskettes? With floppys you don't have to keep reinserting it for it to be read by the system. With a floppy, you just stick it in once and you're good to go. There's no blowing out the cart, it's not a bulky piece of crap, etc.

Nintendo did use floppy diskettes in Japan.
They are way, way, way less reliable than carts, so they were not suitable for the American market.
They did try it with the Famicom Disk System.
Also, cartridges are much sturdier than disks, which is good for everyone, but especially for kids who made up a large portion of the userbase.

I kind of want to say these have aged badly in some ways, but King's Quest was less logical and more sadistic.
How can I use a VCR to play PS1 on a TV that doesn't have any inputs except a thing to screw a coaxial cable onto? The VCR remote is long gone and it's hooked up to the TV when I go to channel 4 but even though my PS is turned on and connected to the back of the VCR with the yellow and white cables nothing shows up. I don't want to have to buy a new CRT for retro games if I can help it because those PVMs are really expensive for not that great of a size.
Hook the component input into the vcr. Then, reroute the composite back out and into an HDMI upscaler converter. Then route that through an HDMI to component converter, then component to Rd and then out to your TV.
