Hate to say the same thing as the last guy, but Master of Orion is the game you want. Space Empires 4 is also very good but that isnt a DOS game strictly speaking.
Wing Commander 1 and 2 are also really good. And if you can get down with text adventures, Planetfall is also good.

it's not a bad way to spend a couple of hours, don't expect to be blown away or anything though.
Been there, done that. It's rather smallish but offers a nice condensed retrospective of important developments in the field to those unfamiliar with them. Has a handful of arcades to play with. Make sure to check whether my "ASS" highscore is still on that asteroids machine. Not sure if it resets when they turn the power off for the night.
It doesn't go very deep, though. Don't expect too much.
Considering getting a raspberry pi for emulation since it seems to be all the rage lately. I wanted to know if the performance was solid or if it's still got hiccups/delay with certain consoles. I quickly lose interest if it's not running 100% speed and was curious what the deal was.
Try getting a retrobit trio for NES, SNES, and Genesis running on reproduction hardware (not emulation) and get a flashcard for free games if you want to shill out a few more dollarydoos. Any form of emulation has its downfalls by the way.

The Secret of Monkey Island has my favourite soundtrack ever. Shame I never got to hear it on a Roland MT-32 when I was a kid, but the Amiga version still sounded fantastic, better than on a PC with a stock Soundblaster.
