Don't make your maincharacter a pure mage, thief or druid for starters.
It legitimately is pretty brutal at the beginning due to how character HP works, as well as magic being able to fuck you over because it's never quite clear what is being cast and being able to stumble on some really nasty enemies right out of the gate.

I mean, you can do that, but it's gonna be difficult. Low HP total and not being familiar with D&D mechanics can be hard. On the flipside, though, mages do get super powerful, they just need to be babysat early on and hiding behind the burlier fighters. However, a level 1 mage is still useful because a single Sleep spell can instawin a fight. Make sure that your first spells are utility/crowd control; mage doesn't become full-blown artillery until around level 5.
First order of business is to equip EVERYONE with slings, bows, darts etc. and keep their ammo supply high. Ranged weapons rule the first Baldur's Gate; they usually have a higher chance to hit than melee weapons, don't break and prevent the risk associated with melee. You will be using a ton of ranged weapons; kite the wolves, gibberlings and that one ogre with them.
Make sure that you press SPACE often. Be a pauseoholic. Pause lets you easily give orders to your characters, react to enemy spells, and adjust in case positioning is wonky. Press SPACE all the time, and set up autopause for whenever an enemy shows up in your line of sight.
Follow the NPC suggestions if you're lost. Really, going Friendly Arm Inn->Beregost->Nashkel won't hurt, and you will meet a lot of useful NPCs on the way. Cookie-cutter Good set of you, Imoen, Khalid and Jaheira covers all the basics (if you're evil, Xzar and Montaron are also high-tier NPCs) except potentially mage, but you will meet one soon enough and mage utility is limited in the early levels anyway; your primary way of engagement is to use your ranged weapons.
Solid characters that aren't obvious but you should collect them early:

I really don't get how people say 3 is the best. The doc robots feel imbalanced, the wily levels are terrible, and it overall feels lazy and unfinished. The music is great though, maybe the best but I can't say for sure.

I played through it earlier this year and had a blast. Definitely my favorite of the first three FFs. FF1 is enjoyable but simple. FF2 feels like it was engineered to leave you dissatisfied at all times.

I got one of these because it was dirt cheap and because a true GBC backlight mod is not possible. Everything's pretty much been said about it, look up reviews on youtube for a quick rundown.
I'd say at $30 you can't go wrong, but it is kind of a piece of shit after all. I don't regret buying one for the novelty.
You can get Everdrive GB too which is great, but if you just want to play pokemon maybe you just want to buy a few repro carts on Ali for 3 bucks.
I have one, definitely worth the price. I prefer my GB Pocket, but I use the GB Boy when it's too dark or the Pocket is otherwise unplayable. As far as multi-carts go, either buy the Pokemon games you want for $5 a piece on AliExpress, or buy a Chinese EverDrive GB for ~$50 on AliExpress. GB Boy Colour and a Chinese ED would run you under $100 for a pretty nice rig.

Is there an order to beat the levels?
The double jump is by pressing again once you reach the max height or did I misunderstood it?
I can do the double jump going up but trying it sideways not so much.
Of the initial stages, I always tackled the fire level last. I never beat the later stages because I never got gud enough as a lad.

If I remember correctly that's a grappling hook sort of thing. You can use it in the air level a bit, but I think it's necessary for the fire level.
Some people remember this black version of the PlayStation, which has the specificity to allow to program PS1 games at a reasonable cost.
And I talk about it because for a few years the indie scene has regularly released games to the style and gameplay 8-16-32 bits. Even today it even happens that they are published on Megadrive/Genesis, Super Nintendo or Dreamcast ... but nothing on Playstation?!?!

That really is the explanation. If you are going to make a 3D game at the PS1's level or better, you might as well just do it in a modern engine with modern tools, rather than trying to deal with the particulars and limitations of the PS1. The only reason to bother making a game through the PS1's devkit is specifically to make a game that works on the PS1, and there is no demand.

Great multiplayer game for the SNES, challenging and lovely sprites, graphics and music. Feels like an actual arcade game and a rare case of the home console version being better than the arcade original it's based on. In this case it's actually a remake as the original came out half a decade before. Highly reccomened, avoid the sequel however. Totally inferior game and feels like a rushed cash grab.
