With all the shitposting about Sun and Moon, what are some things you would like to see? I mean most 3D models are entirely finished, same with the moves, the engine is complete and more refined, seems like they have a like of time to spare on more gameplay.

About to do my first game for today, I'm expecting a lot of double primals and Wolfes and Cybertrons teams.

A rather generic Void-Cat team with some surprises.
What Pokémon is giving you the most salt?
Talonflames and Feint-Users really fuck me up, so especially Raichus and Scizors.
I'm not really expecting to win too many games or even get in CP-range since I took the team from Nuggetbridge and only made minor additions, plus Void-Cat is mostly a gimmick anyway and can be countered by most competent players. But it is fun to play and abusing Dark Void makes a lot of people just quit the game.

I got Gold version over the summer and a GBC, replaced the battery, and set about on a run where I promised myself to;
A) Only use Gen II Pokemon
B) Only use Pokemon I'd never used before, ever
C) Switch out 3/6 of my team when I reached Kanto.
This meant I needed 9 Gen II Pokemon I'd never used before, which left me with mostly shitters. Natu was no exception.
What I will say is that once I struggled my team up to the later levels, while most of the shitters remained useless, Xatu has become my MVP, and my absolute nigger.
If you want to talk missed potential, let's talk about Mantine, who turned out to be borderline unusable and can only ever learn one useful move; HM03.

I think their goal was making it a counterpart to Skarmory with a sky high SDEF instead of a high DEF. They might have succeeded too if it weren't for that pesky x4 weakness.

Xatu's only niche for me was with hatching in Gen 3 since flying flying to the frontier to check out IVs before TPing back to Mauville was slightly more convenient than flying both ways.

So if you're an old fart like me and haven't played Pokemon since yellow came out, and decided to give one of the newer versions a go, what are the chances I could ever 'Catch Em all', would I have to invest in several different generations? or does the fact I've missed 20 years of distribution events made the task of completing the pokedex impossible?

I somewhat disagree. I've done multiple runs of all the games until gen 6.
Gen 6 though, I agree with. I almost didn't make it through ORAS. There's just no sense of adventure anymore.
Played the VC yellow and I'm having fun again, which is funny considering how far the games have come. Gen 6 really is just boring.
