How worthwhile I find talking to NPCs really depends on the game. With newer games, it can be annoying, due to just how many people they can mash in an area. Another issue can be how fast the text boxes are.

Using Persona 2 as an example, I'd like to think I talk to a lot of NPCs, but I don't visit every single location to see every dialogue. I do make an effort to talk to everyone every time I enter an area where I can.

Square Enix might not be the best company, but Theatrhythm Final Fantasy DLC has since stretched out to include songs from Legend of Mana, The World Ends with You, Chrono Trigger and various other Square franchises.
