For example, take TF2 and enable true 1st person in the console. Half the time your weapon or item is flying all over the place. You can no longer use your gun to gauge distance, and jumping at all causes your hands to flap around more than a severely autistic child.

There are limits with field of view that make accurate sync between 1st and 3rd person tough, and all make some compromise, be it ARMA's invisible head or the retarded poses stuff like mirror's edge had to let 1st person view see their arms and legs with their DoV.
Games are better off making convincing illusions than truly accurately modeling, however too many tricks make for a shitty 'cinematic' title
