a grindy session of monster hunter is 5-10 in a row of the same monster that are never quite the same and by the end of the session you have become much better at fighting the monster but still have room to improve, you generally learn a few new ways to avoid attacks more efficiently and cut time off your run each time. unless you farm with bros and just breeze through it and have a great time prancing and organizing your attacks.

grinding in an mmo is spending a week farming moles because of a 0.01% chance of dropping a 3-slot weapon. every mole is easy, every mole is the same, and every time you fight one you use the same rotation of abilities. when you get the weapon you now have to fill the three slots with 0.01% drops from other enemies that are more difficult and spaced farther apart.

there are differences. dark souls has that whole block, strafe, and counter system that makes it feel like it's built around fighting a bunch of other enemies who follow similar rules that you do (ton of humanoid enemies even up through the endgame and a lot of monster enemies that still are stopped by shields and have counterable attacks)
monster hunter isn't really built around a lock on feature and your attacks are generally a lot slower. your positioning is a lot more important, the armor, weapon, and consumable systems have a lot more depth, and it also focuses much more on boss-fights than level traversal.
