This is the only answer as far as I'm concerned. It single-handedly reinvigorated the stale franchise. It had a great soundtrack, including an easter egg if you put the disc in a CD player. It had tons of secrets, multiple endings and incentive to explore and repeat the game again.

Yeah it was great, but I got bored real quick after it. That's possibly because I didn't really sit down and play the Castlevania series until last year and I played them one right after the other. Doing that with the Classicvanias is fine, they're pretty quick games and since you always have to watch your ass, you don't have time to be bored. The Metroidvanias one after another just doesn't work, I think.

I love SotN, but it does have much more obvious flaws than the better classic-style Castlevania games. Granted, this is partly due to SotN being more ambitious and having more features and mechanics to fine-tune and balance, but it's still hard for me to say that it was necessarily an improvement from its predecessors.

So far as the exploration-focused Castlevania games go, I also feel SotN was finally surpassed by Order of Ecclesia.

What did you gentlemen think of Castlevania Lords of Shadow? I just beat it a couple days ago.

The combos didn't seem to work on most enemies and bosses since anything bigger than a generic zombie is almost impossible to stagger and it had as many puzzles as ten zelda games combined, I was frustrated and annoyed throughout pretty much the entire playthrough. The monsters felt really generic without any Castlevania flare, goblins, trolls, snow goblins. It felt like a first edition D&D monster manual than anything from the Castlevania series. And the final battle was with Satan. I know Castlevania is about fighting monsters from every sort of religion and mythology but fighting Satan himself felt oddly out of place for me. I didn't like it.

The Metroidvania ones, because it's a better genre
Symphony of the Night, Aria of Sorrow or Order of Ecclesia are all good choices. SoN is more barebone, being the first one.

If you just want a platformer with no RPG elements, then I guess Super Casltevania 4 on SNES. Or Vampire Kiss/Dracula X/Rondo of Blood (which are the same game).

The series has two big divides. The classic arcade style sidescrollers and the 'Metroidvania' exploration types.

For the action games I would recommend CV1, 3, Super IV, Bloodlines or Rondo of Blood.
For the exploration ones there's Symphony of the Night, Circle of the Moon, Aria of Sorrow, Portrait of Ruin and Order of Ecclesia.

There's a loose connecting plot over most of the games, but it always boils down to "There's Dracula, kill him".

So much wrong in this post. Ignoring the stupid shit about the Metroid ripoffs being better, Dracula X on SNES and Rondo on PCE are not the same game. At most, they share a story. The levels are completely different and of course the music is different as the SNES did not have a CD addon.

Doesn't matter but if you like challenging platformers, play the first one, the third one (Japanese version, it's much much better and aside from the intro, ending, and party member text when you meet them you won't need to know Japanese, and there's a patch if you want it for those bits), IV, Rondo of Blood, Bloodlines, and Castlevania Chronicles.

For Metroidvania, play SoTN and any of the others that strike your fancy.

There isn't one outside of Virtual Console games, of which it has all the NES, SNES, and GBA games.

Play play Castlevania Rebirth in Wii mode, which is a pretty damn fun game and great call back to the classic series (it's based on the GB Castlevania Adventure but shares virtually nothing with it outside of the plot).
