Freelancer?

You start in a small ship, and throughout the game you can buy any shit you like. You could decide to be a trader - to sell goods all over the galaxy and make some profit. Or you could do bounty hunter missions, to fight and shit. What you chose isn't fixed, you can just do whatever you fuck want. Of course, there are diffrent ships for fighters and cargo loaders for trading.

You control your ship, it's a space RPG

Galaxy is fucking massive, would take you half an hour from one point to another sometime

You're pretty much describing what EVE online is for people who actually pay for their subscription instead of farming/trading/etc the whole fucking time to pay for it with ingame money.

If you don't have to worry about hundreds of millions of ISK every month just to stay subscribed, EVE can be a shitton of fun.

My longest playthrough of vanilla Freelancer was 100 hours. I made it a point to circle every star in the game.

Shortest sprint for the plot was 6 hours using a light fighter. The battle with the Rheinland fleet was the hardest part. It was a Startracker if I'm remembering correctly.

Sigh, it was before the time when I took regular screenshots of my games.

Not control but you can have multiple ships as part of your fleet. As you fight other fleets you can deploy more than one ship to battle. There are several sizes and classes like carriers, fighters, destroyers or frigates and various support ships. It's possible to issue RTS-like orders to assign ships to a location or duty like guarding a certain area or ship. Actual combat is then just you controlling one ship with the others roaming around as wingmen or going to the specified location.

X3 Albion Prelude as other anons mentioned.
You usually start in a small ship (depends on your character start) and you can ignore the fleet / economic / station management portions of the game altogether if you wish and just do combat missions. They start out small but as you level up your combat rank you'll be getting missions with millions of payout and soon be able to purchase massive destroyers. You'll also be able to hire mercenaries and capture big ass ships, though that requires some management and a transport ship or one that can launch boarding pods. You can also participate in the plot war, but I'm not sure how profitable that is. If you're feeling badass enough you can try pissing off some of the races by shooting up their transports / traders and loot them. Note that Terran Commander start locks you out of some content and interaction with most races so avoid that on your first play.

Also even though you mentioned you don't want that much dogfighting, Freespace series is still well worth the look. There exists a port for the first game that converts it to second one's engine and both have active modding communities who have managed to make the games look pretty great. God tier OST, interesting story and gameplay that sadly blows many modern day space games out of the water.

My biggest problems with the space games available are:
- going against humans factions instead of alien threats
- aliens look stupid (remaining Star Wars, Star Treck influences)
- some human groups dress like they were in the desert, or some sort of rudimentary fashion, in a futuristic space setting
- controls suck, except for Freelancer and Strike Suit. more to do with the camera fixed in 3rd person view mode.
- ship designs and cockpits suck, as if they were made of tin as idealized back then in the 80s, and are too edgy/blocky... this might be because they're done by westerns - a quick look at japanese shmups, even from 16bit era show a lot cooler shit.

Pros:

-Is free
-It's blocky therefore easy to build and shit
-Any size ship you want
-Easy building methods, large-scale ships sometimes take less than medium ships to build up

Cons:
-It's blocky, not realistic or looks like shit
-Didn't like the UI
-Eats a lot of resources because it's a beta
-The A.I. has insane aiming capabilities so if you're not tanky enough, you WILL die doesn't matter how much evading you're trying to do


Space Engineers
-More of a realistic version of Starmade
-OK Graphics
-Great interaction
-Blocky enough but has lots of good models
-Interesting block interactions make interesting mechanics for you to use

Cons:
-Beta and it's not free
-No planets
-Not a massive galaxy to explore, not much interesting things to discovers
-Takes a shit ton of time to mine and build shit up
-No A.I. for you to play with so it's pretty much a building-gathering game, well, it has some miner ships you can steal shit from and defend yourself against turrets, but that's pretty much it

The story is pretty profitable, you get space ships thrown at you every few missions that you can keep or just sell.
Final ones are a HUGE pain in the ass though, Xenon destroyers wreck everything unless you cheese them with torpedo salvos.
