If their ONLY defining trait is that they're black or gay or female or whatever, it makes them incredibly weak as characters for the sake of "representation".
I feel like one of two things could be utilized here, but those require devoting time to fleshing out an idea to make it interesting which a lot of AAA companies aren't willing to do:

The love interest is the same sex or they are dating/ in a relationship with someone of the same sex. Just part of the character bio, but doesn't affect the plot at all. There could be dialogue between characters, maybe someone remarking on the relationship, but no need to make it the moral of the story and the entire game to revolve around such a triviality as gender and sexuality.
