They problem I found with a lot of the online builds is that most do one thing really well, and that one thing gets super old fast. Either that or they are specifically designed to beat other builds in PvP.

Both the main campaign and MoTB are, for the most part, super easy. Just make a character you have fun playing and you'll be fine.

I think it was a bug that allowed it, but I played a Druid/Monk karate bear in one game. Lawful-Neutral allowed both monk and druid classes and unarmed feats worked in beast form.

One thing to note about MotB is that if you create a character from scratch for it, you're dumped out at like level 17 with no ECL adjustment. I think you're 18 by the end of the tutorial dungeon. Either way, you start with generic gear that probably doesn't suit your build, and you're underleveled for the content that's outside the dungeon. Most builds people post are designed strictly with pvp in mind and are generally unbearable to play through the game with, or rely on having the absolute best equipment you can make, which you didn't get to make because you didn't play through vanilla.

If you start MotB from scratch, you can't really afford any nonsense in your builds. Like a caster that gives up any caster levels 1-18 is absolute torture because you NEED level 9 spells at the minimum. Everything before that is dogshit in epic level content, even with maximize/empower. Likewise, a melee build that gives up BAB during leveling, or doesn't have blind fight is going to be a total bitch. Any race with an ECL penalty is a massive disadvantage when starting MotB fresh.

Meanwhile the epic feats are insanely overpowered, so you get this weird difficulty curve where you're either fucked, or you can cast vampiric feast and everything dies.

Everything, really. It's a wizard with level 9 spells, but also really good martial ability. There's a bunch of feats that up your AB and damage and with finesse and a rapier you've got even more ability to hit and with the epic level feat combat insight you switch int for str when it comes to damage rolls. So you end up as a competent caster who can also wreck shit almost as well as a dedicated fighter.
