Which one of these two classics is the overall better game? IMO, if I had to judge each on purely objective merits:

Demon's Souls
>better atmosphere. Tower of Latria alone is one of the most atmospheric, well-designed areas in any game ever made.
>betters sense of weight and movement
>better soul/body form system
>better art design in terms of armor, weapons, bosses etc.
>more unique, interesting environments
>better lore

Dark Souls
>better story as a whole
>better item/weapon variety and, as a result, more build variety
>better bosses from a gameplay perspective
>more cohesive world design
>more difficult, but fair
>more refined controls

I think both games have amazing art direction, amazing music and amazing gameplay. I have probably played DeS the most, but DaS is really growing on me and I'd have to say I think it is the better designed game as a whole, but the atmosphere of DeS cannot be beat.
