Like, the redhead not!Shiro character summons a genderbent bishoujo version of Dracula from out of a light novel. The blonde twintails girl summons a ikemen Dracula from an otome game.

You seem to be completely clueless about how characters designers (especially of LN) do participate in plot discussion, helping the writer to shape the story along with the responsible editor. See even Madoka, Aoki Ume is part of the creator group Magica Quartet and gave opinion during plot brainstorming. So the "artists only draw and have no say in the plot" is a total bullshit.

That said, in the particular case of SonoHana, they have made it clear this is the pure yuri franchise (shunning even toys), so there's no worry, no matter how much or little influence Peko has over the plot. If the company are ever going to do het, it won't be under the SonoHana franchise, simple as that.
