They're Hollywood hacks, so as the seasons have gone on they've gotten less and less accurate to both IRL medieval aesthetics and fantasy aesthetics. The Lannister soldiers were always the worst offenders, dressed in uniform that's at the same time too low-tech and too high-tech for the rest of the setting, and not even very practical either. It's an acceptable suspension of disbelief for the ceremonial household guard, but being able to raise and re-raise armies where even the archers are uniformly fully armoured, in straits as dire as season 7 Cersei, is absurd.
Other examples of rule-of-cool that ends up not being very cool by dint of impracticality and predictability are how the Northerners generally wear leather and furs to the exclusion of chainmail, the proportion indicating allegiance to the Boltons vs the Starks. This despite northern soldiers being depicted wearing the very post-medieval style of cabasset helmet, and frequently no body armour at all.
Then there's how the Tullys notably wore scale armour, which was a real thing, but much much older than the more effective in medieval times chainmail armour, and the wars-of-the-roses period plate armour. Similar to how the Lannisters have pseudo lamellar armour, it's something chosen for a unique aesthetic, but it doesn't even work with the Tullys because they blur into muddy-metal colour, so they might as well have been chainmail to begin with!

Later seasons I've stopped giving a fuck, but the newest Mountain design, while being admittedly cool-ish, is also stupid. Cersei's outfit doesn't look medieval at all, though.

They can also use Euron as an allegory for Trump. GRRM (and probably D&D) both hate Trump, and this idea will be used to motivate fans to want to bring down the current administration even more.

I am genuinely not even sure what you are talking about. She is depicted as a sympathetic character, not a good one, there is a difference. Yes, I know she did bad things because that is evident on the show but she is by no means considered a good character and she's really depicted as a villain albeit a sympathetic one because she does care for some people. The issue with show Cersei is that the show decided to make her a good mother without any of the narcissism of book Cersei. Book Cersei cared about people in a selfish way because she saw them as extensions of herself. Show Cersei seemed a bit more genuine in her affections for her children, so it made for a stranger/sharper contrast to when she did sociopath shit like doing 9/11.

Her break with Jaime was equally sort of strange and rushed, which relates to the above.

The issue with Cersei as motherly isn't the sincerity or quality of her motherly feelings, it's the fact that they have continued with a relentless drumbeat of scenes with the exact same tone, pacing, dialogue, everything, for 7 seasons now, even though the situation hasn't actually called for it for at least one and a half.
If they had any sense of where they were going, or even of what what they were doing meant for the character, they would have toned down the "mama bear" Cersei around season 6 and doubled down on "mad queen" Cersei in season 7, but they haven't done that, because if there was any logic to the consequences of her being politically the mad queen, she would be gone midway through this season, at best.

Even if we leave aside that Cersei has zero logical justification for being able to hold the Iron Throne at all, the way they present her character's internal, emotional state vis a vis the personality conflicts of the main cast, is totally out of whack with her political actions and her entire persona as a social "actor".
If D&D had a consistent vision, they would present the conflict between Cersei's disastrous, abominable political actions and her maudlin motherly emotional justifications for them as being evident of a psychopath, but none of the dramatic elements available to them are being used to do that. Instead, we get exactly the same story "beats" as we have since the show began, where Cersei is morally uninhibited and selfish, but politically savvy as a consequence of this. It's upside down from what it should be, where Cersei should be presented as a lunatic who should never have been allowed to be regent, let alone queen in her own right.
