Choose cheapest month as time, play around with different dates to try and get a combination closest to the cheapest flight quoted for that month on the drop down list which you choose months from if the price doesn't show up on the calendar immediately.

Yes and no. There's tons of evidence that suggests that airline and hotel companies do this by using your location, cookies, etc to determine your income group and how serious you are to book but the companies vehemently deny this.
Airlines have also determined that people are more likely to book a ticket after coming to a website for a 2nd or 3rd visit, after searching through the competition. They'll advertise $109 initially and once you've come back it's magically $129. I've seen this happen from my own experience. However, airlines say that it's due to price fluctuations and the planned changing of prices.
These companies would also set prices based on your location and if it is a wealthy area or not. IP address comes back to NYC? Expect high prices. You live in Mississippi? Don't expect prices as high as in NYC. Norway vs Romania? It'd be better to be Romanian. This used to be a bigger deal 10 years ago but no so much anymore

Says flight to 300, flight from 300 USD each way estimated price chart at the top, BUT Then down below it says 1000USD as the cheapest ticket found...
Which is not even as cheap as the google flights listing.. What gives? Is it 600 or is it 1k?

I like kiwi.com, you can click on an starting Airport and set a radius. And it will look up prices from all Airports in that radius to all other airports in the world and show them on a world map.

Because the world is as it is, a flight from chicago to finland costs less, and it connects in new york

You just don't get on the second leg of your flight, go to exit the airport, tell immigration you wernt handed a arrival card and get a tourist visa
I imagine pre booking accommodation in your arrival city would help, as you'd need to complete the visa process as normal
