Not that interesting but with a bit more character than a small town in Alabama or Iowa or Oklahoma
Places like Junction and Bandera still have a cowboy sheen and you can find nice local markets
Don't expect to witness a gun duel outside the saloon or anything
On my first visit to TX, I drove from Houston to San Antonio, and deliberately detoured to stop at La Grange.
Nice town; reminded me of the rural town I grew up in in Canada. Town square of old brick buildings, bigass courthouse, old houses. The only weirdness was an old gas station that had about 5 vintage MGs in the window. Not open, locked up.

My experience is just with central and west Texas but I can tell you what I know
West Texas: Prepare to buy all bottled water, water there is beyond impotable, and coming from someone who is not picky about water.
West Texas is fucking dry and shitty and you can get occasional sandstorms, central Texas is much more beautiful, with fields of wildflowers for miles and miles during the spring.
Tbh senpai West Texas is shit. Oil and gas fields everywhere, hot and dry as fuck.
Mason is a quite nice town with about 5k population on Highway 29
Smallest I've passed through is either London, TX pop under 100, or Orla, TX which I only saw a handful of mobile homes.
For the love of God, do not attempt to live in any of the following shitholes.
Junction, Fort Stockton, Pecos, Bertram
Yes, as a previous anon mentioned, some hillbillies do meth, this should not come as a surprise. I found it is quite bigger in west Texas than central though
