I highly recommend staying on the strip if that's where you are planning to spend most of your time. I stayed at New York-New York, and it was a pretty good experience, especially for the price of the room.
Gambling was fun, besides that, people watching late at night on the strip is good for a kick because you always see wacky shit going down (I saw drunk people falling down multiple times, 2 black dudes getting arrested and one took off running and the cop chased, but I didn't see if he got caught, also ridiculously scantily clad women especially daytime near the hotel's pools). Pretty much casino hopping, maybe a show if you want. I saw a cheap comedy show, I was hanging outside the doors right when it was starting and a couple walking in had 2 extra tickets and offered them to me.
The buffets are pretty sweet. I dished out $43 pre-tax for the Wicked Spoon buffet at the Cosmopolitan, which is a pretty high end one. It was worth it. Sushi, lots of seafood, lamb, bone marrow, etc. If you're single, there's a whole nightlife that I didn't explore, but imagine it would be worth it.
