I've booked a return to Italy for £50.
The hand luggage dimensions are reasonable from my previous experiences and they're always cheap and decent when flying short distances.

It's like the saying, business class is worth every penny when something goes wrong. If a flight or connection gets delayed, they will help you. Especially compared to how they treat economy flyers.
So, by extension, economy airlines are fine when everything runs smoothly. If something goes wrong (and it takes very little considering how close to the edge these discounts operations are run) it is a major shit show.
Short hops, where trains or rental cars are an effective option, take a cheap flight. Crossing a continent? Pay a premium, especially during winter travel.

I personally don't give a fuck about customer service and whether the staff are overly friendly or not. Just get me to my destination for the cheapest price and I'm fine.

Easyjet just makes things easier. I used it extensively when I stayed in Europe for a year.
