When Finn and Rey are running into the oscillator chamber, you can see the snowspeeder in the background, implying they used it to get there.

Originally there was supposed to be a scene showing how Finn and Rey stole the speeder, followed by them being chased by Snowtroopers in snowspeeders of their own. Too bad it got cut, as it sounds like it could have been pretty cool.

It's a simplistic story for younger readers, but the way they frame him as a spaghetti western desert sheriff is awesome, need more space westerns.

What happened is simply that toy makers were shown all the designs from the movies, who/what they are, and what roles they play in the movie.
Since toy makers usually need to start production at least a year before the movie is released, they are also using early designs that might change within the movie.

So they're given a 1+ year head start and the director/producers/editors are still filming, changing designs, and editing/testing the movie up until about 2-1 month before the movie is actually released.

So if you don't see a character or vehicle, it means that their scenes were made, but they never made it to the final cut of the movie.

See, the thing is a lot of these look more like aliens from Abrams Star Trek reboot. Sure, a lot of them (mostly the smaller ones) have that classic Star Wars feel, and that little demon black frog thing is awesome, but most of them just have the same kind of huge headed large faced look.
