Lots of shit can change from artwork to final manufacturing I suppose. The packaging was probably being printed while the figures were in production too, so it's also possible it was too late to update the artwork.
Not bashing, but what's the point to these? Like... I get it if a character has literally nothing else to collect or display and you're a big fan, but like... what's the appeal of collecting tons of them? Is it just for the sake of collecting something fairly cheap?

I don't think you can unless you get REAL lucky at a garage sale or something. They're expensive, buying the parts off bricklink will be expensive also, though IIRC there're some guides out there on what parts can be substituted for cheaper variants to bring costs down a little. I know this exists for the UCS Falcon at least.

As of right now? There really isnt. Stalk ebay auctions with good feedback, and ask them questions if you have to.
Old UCS are too rare because really only collectors buy them, as they mostly arent for playing, which coupled with their high price tags turn themselves off normal people who sell Legos.
You have 3 Options
1. Pray Lego make another version
2. Stalk auctions, ads, and try to get them as cheap as possible
3. Buy the Lepin knockouts, as they still look really nice as display pieces. If youre buying them for the Minifigs or because they have play features, than it may be awful for what you want.

People tend not to document plush toys. They mostly get played with by kids and end up ruined and thrown away, so even if by some miracle you managed to find out who made it and when it will have been out of production for years.
There's about 4000 stuffed/plush gorillas on ebay right now. I'd recommend browsing those.
as much as I hate to say it, try reddit. your chances of finding someone who knows what it is, is bigger on reddit, because they probably have more people there.

Which Iron Man figure would you think is the best? I have one Hot Toys figure (ED 209) so I'm no opposed to getting another one but I can only get a single one.

Yep. Bandai USA released various Mobile Suit Gundam carded lines. The Japanese releases added detail lines under the MSiA (Mobile Suit in Action) banner no matter which Gundam series it was. Wing, MSG, G Gundam, etc all went under their anime series names in the US
