I think it's less that they're too cliche and more that they've become almost comical at this point. I can't help but think of them as wacky comic relief enemies.
I am starting a D&D 3.5 campaign and I want to play a Prince/Noble Birth character but I am not sure how to do it without being a fuck about it.

Class wise, probably a Knight, Paladin, or the Aristocrat npc class.
You could also be dispossessed having your lands taken away from you by evil forces. Another idea could be playing a Sorcerer who is kicked from his home after his innate powers area revealed.

I've found that the best way to do this is to play a noble that actually cares about the common man.
He understands that his livelihood and well being comes from the positive relationship between his noble house and the people "beneath" him. Despite his noble upbringing, he's not afraid to take off his white gloves and work alongside those less fortunate. Other noble houses think that he's a sucker, but they don't realize that years of getting fucked over by other nobles has given him an uncanny knowledge of when people are abusing the systems set in place and how to counter it.
Anyone can achieve power with enough effort, but it takes a true master to maintain that power even when being handicapped by morality.
What type of character are you shooting for? A noble can be lots of things.
He could be a spelunker looking to build or strengthen his family fortune and holdings.
They could be a warrior who seeks to make his name known above his family name.
She could even be a warlock who has made a deal with a power to bring down her rivals.

I don't know about a dedicated system, per say, but Wizards made a few Planeshift documents for DnD to use as background info for a 5e campaign.
There are a couple of fan-made adventure modules for DnD that I know of, but that's all that I can think of off the top of my head.

I had a bunch of rules written up years ago for what was basically a Magic tabletop wargame, using decks and cards as the miniatures. It was barely functional, but thinking about it, how about we try and make a system that uses cards as the basis for the rules?
So far I'm thinking a system using opposing dice pools for power and toughness, with maybe toughness also being the creature's total wounds?

Beginner question. How do i create a berserk armor like power? Gives the character a huge buff, but is tremendous stressful for the body.

First, stat out the buff you want. Add Disadvantages as needed. M&M is an effect-based system. You need to start from the end - the result of the power - and work your way back.

Are you talking about the Berserker armor in, well, Berserk?
I would definitely say one great way to simulate the "endurance" aspect of it is through A Reaction Healing effect that has the Temporary flaw so after a while your character would give in to the wounds. The other powers, ranging from Protection to Enhanced Strength, would probably have a Side Effect: Always 2/rank flaw ranging from the character having to resist against an Affliction equal to the effect or basically a Complication that you do not benefit from Hero Points with.
There's also the Holding Back advantage from Hero High that would also work, but there's a lot going on with that Advantage so it might not be your taste.

My favorite true adventure book is The Ra Expiditions by Thor Heyerdahl. In it, Thor and company build a reproduction of an ancient Egyptian reed ship and sail it across the Atlantic.
To build the ship, they bring in a reed shipbuilder from Chad, who's built many lake-scale reed boats but never an oceangoing one like this one. With him they closely examine all the existing models and drawings of ancient Egyptian ships, and they show this rope tied for no apparent reason from the peak of the stern to the middle of the deck, right where everyone will trip on it all the time. They can't figure out why it's there. Finally they decide that the artist drew it there by mistake, and leave it off.
So then they cross out of the Mediterranean into the Atlantic, and the first full-size ocean swell they roll over, the ship doesn't form a spring the way it would if the peak of the stern were tied to the deck - the rope made a bow of the ship, with itself as the bowstring - and the swell breaks the spine of their ship. The whole rest of the expedition, they have to work and struggle and fight to keep sailing.

I had an evil character who did this. He defined people into two categories:

>moving
Those who moved were people, those who were stationary were dead. This most often was not physical movement, but movement forward in a sense of one's life. Those who were stationary were went to be consumed as fuel by those were moved. He was societally cannibalistic, but sought to help all movers continue moving forward. It also did not matter what direction they moved in.
One of his biggest character arcs revolved around a holy man becoming a saint and my character pushing him towards sainthood because he was 'moving faster than the others' and 'caused others to move in his wake'.

I think it's mostly irrelevant
In a lot of settings and systems the difficulty included in killing undead is more about disrupting the evil magic juice that powers them, their own body is much less useful. It could be that a fat guy and a nonfat guy have the same amount of evil undead magic juice in them, just more concentrated in the nonfat guy, and they're both more or less just as durable and dangerous.

Depends on the purpose. Assuming you're being moved by muscles an undead doesn't feel pain and can just overcompensate for weight until the muscles are too damaged to move. If you need a wrecking ball putting a heavy zombie on the field at full tilt is a good idea since no matter how good your armor is you'll still get knocked to the ground. Of course once there you'd ideally have other undead to finish the target off or otherwise occupy it but a few wrecking balls never hurt anybody.
