How does one make fights mechanically interesting besides "beat shit up"? Have any of you included inspiration from MMOs for mechanics? If so, how did it go?

Strike! is what you're probably looking for. The class archetypes all support each other nicely.

Have a timed goal to do something aside from beating up the enemies, with the enemies serving as obstacles.
Have lots of terrain effects that make positioning more interesting and important.
Have the enemies have a timed objective that the players have to stop them from accomplishing.
Set up a convoluted situation where the first side to die wins, and watch the hilarity.
One of the enemies is a spy, the players know this, but don't know which, and the spy can't risk outing themself unless they're sure the players will will, and they don't want to kill him.
Have a fight in a massive crowd of bystanders.
A god of chaos is bored and decides to show up, and randomly chooses one type of attack this turn that heals instead of deals damage, or vice versa.
A god of law is very concerned about what's happening and shows up, smiting anyone who hits below the belt or uses anything that even RHYMES with "pocket sand".
Two words: Conveyor Belts.

That depends on your definition of more interesting. Do you want constant fireball throwing or more nuanced rituals? Personally I feel like constant fireball throwing isn't terribly interesting, but I'm sure others feel as though it's the most fun.

Fireball throwing isn't bad, but it should be one of a wizard's many utilities. Something closer to a cost system like in video games where you only have a certain amount of mana that can be used(Regenerating some over time) might be a worthwhile way of doing it. Having to actually use mediums such as wands and staves to enhance casting would work too, each with its own benefits and drawbacks.

No guns, no electricity, steam engines don't work, and explosives don't work anymore. Whatever it is that caused the Change ignores natural laws and doesn't kill off electrical impulses in animals. Alien Space Bats are dicks, but not that big of dicks
Well having read these I think the thing that got to me was how quick the progression was. I expect in that setting you would have a lot of people who didnt really know what they were doing. Fighting technique would redevelope latter, I would expect a lot of desperate melees and small group engagements. Sure there would be people who knew proper technique and tactics, but that takes time to proliferate. I also dont think they would return to old lone em up style warfare. Assuming military personnel or even enthusiasts survived I would image they would advocate more modern guerilla tactics, though it wouldn't translate over perfectly since we dont have modern arms. Weapons would be shit for a while while we rediscovered how to do things, I would not be at all suprised to see jerry rigged spears and clubs and whatnot in a lot of cases.

The players (except the one whos chaarcter it was) got so involved in the teamup between the Robot King of Sweden, Ravus the Dark Sorcerer, and Dr Demento, and their subsequent invasion, it legitimately took them by surprise that Dr Demento turned out to be a former teammate super scientist in a wheelchair who got sucked into an immortality hole with a roman god of terror.

I've always wanted to run a supers game right on the cusp of powers appearing. I always enjoy the idea of the players actively shaping the world not because they're powerful, but just because it's early enough that a strong enough fart could shift things. You failed to protect the city, public perception has shifted against supers in general! etc.
Explain to me why GURPS isn't broken.
I'm not going to lie, some parts of GURPS still confuse the hell out of me. Most of these issues I have is with skills. What is average level for a skill?
I always thought that a person who is "good" with firearms would have ~20 in the appropriate firearms skill, but I'm realizing that they might have a way higher score.
What would be an average skill level for an average person? Would the average marine have a 20 in rifle, or a 60? Would a boxer have 18 brawling or 90 brawling? I seriously have no idea how to gauge these numbers.
I am also very annoyed that anything you don't specifically state your character is proficient is is considered a weakness. Just because my character has never fired a gun before, should they really receive a default of DX-4? This means that if an average human has a 10 DX and has never fired a gun before, they have to roll under 6 to shoot an easy target at a close range. That comes out to a perplexingly low 9.3% chance of success. Some skills, such as diplomacy, have a default of IQ-6, which means that an average person must roll under 4, and only has a 1.9% chance of success.
Simply because I didn't spend valuable and limited points in a skill I didn't think was going to be useful, my character is completely inept in the art of speaking with others. The absurdity of this absolutely stuns me. I don't want to list every single skill my character has ever attempted, just to make an average human being who has a feasible aptitude to perform various basic tasks.
If I wanted to play as a normal human being, I would need to put points into drive, despite not being a good driver, despite not driving for very long, and despite the fact that the game isn't focused on driving cars, just to ensure that my character isn't completely inept when behind the wheel.

Average human soldier, statted out not only in his career but also non-military stuff like school education, hobbies and other variations is roughly 100/-50 for total 150 points available to be spent on stuff.
How exactly will your ass manage to acquire 20 rifle and 90 brawl with so little points?
Next, GURPS is 3d6 roll under system, that means you have to roll UNDER your skill number to succeed.
If skill is 12, you have to roll 12 or less on the 3d6.
Average of 3d6 is 11-13, as such skill level of 12 means that the person performs this skill professionally, for money or good enough to earn money.
Average infantry soldier would shoot his rifle at skill level 12-13. Special Forces would go for 14-16. Secret Government Hitmen can reach 18-20, but 20 is considered "The best person alive."
On topic of defaults, since you've never shot the gun before, you're either shit at it or your dexterity is good enough to let you not be shit. This appears in many systems such as DnD with it's weapon proficiencies. You will not be as good as a trained soldier the first time you picked up a gun. Neither will you be a good speaker if you lack Charisma, can't speak fluently and pleasantly and don't know the tricks of guiding the conversation to your benefit.

No you won't. To recieve driving license literally everywhere you have to pass driving school. A point in driving skill equals that. If your character doesn't have this point, that means he never learned how to drive and thus is inept at it.

Why is it so hard to kill people with guns in this game? i swear to god, people are constantly hitting with guns but don't do enough to kill because of the autistic way that successes work in combat. You have like a 90% chance of hitting someone if you have a 5 dice pool but only like 10% chance of putting them down in one shot.
