I've actually played in one, and there was lot going on. For one thing, the winner got to be the Sultan's bride. (The female Ranger and Sorceress were happy to compete for that, 'nuff said.)

Also, the gladiators were plotting rebellion and there was a gigantic pit-beast beneath the arena.

How do I make a Norse mythology inspired setting, with out making it a LotR or Skyrim ripoff?

Make it a viking story.

With hords of warriors who conquer, pillage and burn, before returning to their homeland.

Center it around some "norse looking" magic : talking to and taming wolves and bears, use rituals to conjure snow, hail and storms.

Create monsters and threats that linger in the cold, dangerous environment which they try to tame.

Also make women as important as men : no SJW talking here, it's just historic facts. Archeologists discovered not too long ago that the vikings skeletons they studied for years are not all male, there were a lot of female aournd battles too (corpses found with axes and armor).

Which also means that there is no such thing as 'better' treatment for women there. They are warriors, as capable as men, the only difference being when they are pregnant, the only time when they need protection and special treatment to protect the heritage of the clan. All other time, they are just like men.

I'm assuming you mean "unable to achieve escape velocity [with chemical engines]" because without those brackets they just don't go into space.

With those brackets I guess they eventually build a better way to deliver payloads into orbit, an electromagnetic catapult for instance, or some other technological marvel/loophole if they really needed to get something into space.

But in reality it's pretty likely the just don't bother. For the most part space exploration is really mostly pointless, there's really very little reason to bother with it except to please astrogeologists and astronomers (who mainly rely on telescopes anyways).

Nearly everything that we currently as a civilization know. For the most part the distances in space are so vast even if you moved a telescope outside of the solar system it would still be like looking at it from the same angle

Where do I actually start when it comes to mapping and stocking a dungeon? Is there anything specific I should know, or should I just go for broke and start stringing encounters together already?

Plan 3 to 5 interesting encounters, puzzles, or challenges, then connect those with hallways. Done and done. Mapping out large dungeons with several easy fights scattered in them is just busywork and a chore.

Don't plan encounters. Make a map, put factions (3 best) in the map, put things each faction wants in the map (some in their own territory, some in others). Put some inherent dangers in there, some secrets (passages, rooms, treasures), and work out who else knows about them. Drop in a couple of weird useless things, maybe something really weird but potentially useful.

Make sure that the players have a reasonable chance of meeting each faction through exploration pretty quickly, then let your players loose.
