I'm in to all manner of manual brew faggotry. Aeropress, pour over, french press, moka pot, all of it. Manual burr grinder that i have adapted to operate with an electric drill because the motors they put on electric grinders suck and always die within a couple years hard use.

Drip machines have a few issues. Water doesn't get hot enough, their drip always straight through the center on the basket which forms a funnel and allows water to pass through without exposure to all of the grounds contained within. This is why pourover, even with a paper filter, tastes considerably better. The device is cone shaped and comes to a point at the bottom. You pre-wet the grounds with small amount of water so brewing starts well before saturation. Slowly pour water, just iff boil, in a spiral above beans making sure not to overdo it and overflow the water. Tasty business.

My office offers free drip coffee. My manager will sometimes ask if I want anything from the boutique cafe down the block when we're particularly busy and just put it on his company card.

Also, as someone who has worked at a shitty chain cafe, you can only get decent espresso out of a high pressure machine that costs several thousand dollars and requires periodic servicing.
