Haven't yet. I had a phase where I thumbed through some early Christian writings though, to see how they thought. Some of it was inspiring, some of their anti-pagan polemic was pretty well written, but it didn't get me to go to church or accept jesus christ into my life as my personal lord and savior.

The problem with when Jesus said such things is that his message of peace, forgiveness, etc. is accompanied by the COMPLETE opposite earlier in the Old Testament. When I read "we should forgive our enemies" in the New Testament, it's completely ruined by the fact that I if I was turn to a random page in the Old Testament I would have a pretty good chance of finding examples of murder, genocide, rape, pillaging, slavery, etc.

It's not just saints and the rational stuff is pretty clear. However humans don't come to understand stuff purely through reason so I and pretty much no one expects anyone to solely be convinced through apologetics. The historical/philosophical proofs generally only serve to open people up and try asking God to help them have faith.
You won't actually be able to understand Christ just through the reason aspect, try just attending a service to get the actual experiential aspect.

There isn't really any part of it that is easy (or arguably possible) to refute. And if the saints are subject changey it's largely because people who aren't knowledgeable on the Faith generally try to talk about incorrect things.
(Like arguing against the Catholic Church in any way other then it's claim to Truth as that's literally the only thing that matters if you understand their claims)
