In order to hand control of production to the workers the government must take it over first.

And even then, when the workers control the means of production...what then? We're back to square one. The people own the production, but there's a heck of a lot of people. Do they choose representatives to stand for them in whatever power structure they have built? Do they operate some kind of direct democracy where they all vote on every issue all the time?

At the end you always end up with a government of some sort. An animal without a brain is not going to function - this analogy can be used for countries/peoples without some form of government. A resource-coordinating body to hold it all together. Humanity isn't an ant hive.

Yes and no. Trotsky was a Jew. I think many of the original Bolsheviks were Jews. They disliked religion but it wasn't until Stalin that Jews were really thrown in and roughed up. I believe they allowed the Orthodox church some leeway though
