Typically if you're shooting portraits then you're gonna need to separate your object in the foreground from the background, using depth of field. Most times, you should use a smaller f-stop number, such as f/1.8 to get the shallowest depth of field as well as a nice blur and bokeh going on in the background.

You can't switch between wide DoF area shots and creamy blurred background portraits.
You can't change focal length between wide angles and telephoto angles to affect the geometry of lines, faces, vehicles, etc. (A phone camera is usually only like 27mm or 29mm with no way to change it)
The phone essentially eliminates photographic technique, so everyone's phone photography is essentially identical. 'pro mode' is nothing more than a marketing gimmick, as it's missing all the actual choices for pro photography.

So I want to get into youtube and video. I am looking for a window mount for a galaxy s5 to record the videos, so I bought an adjustable window mount. However, it is horrible, it vibrates all over the place and won't make a good video. Please let me know if there is anything for me that would be more solid to mount my phone. I did try to tape it all around with electrical tape, to make it more rigid, but it was still shaking like crazy.

Yes and no, it all depends on the meteorites. If they are small and fast your camera will have a hard time capturing them, and they'll show up extremely faint or not show up at all. If the meteorites are larger and slower than they will easily be visible even in a RAW frame.
