I've been a mostly landscape photographer all my long (short) career of photography, however I am in slight trouble now
so there is this thing I agreed to and it involves shooting models, nothing too fancy, just a photoshoot outdoors, I know pretty much everything about how I should shoot settings wise, but I have 0 clue on how to direct them, what poses for them to make etc.
what the fuck do I do? I could earn money for this but if I fuck up, well, it wouldn't sit well

If they are experienced models just tell them you know nothing about modeling and let them do their thing.
You will come over like a complete sperg if you try to direct people who know better what to do then you do.
If they are inexperienced then don't worry: your shoot will suck anyways. Start with experienced models, that's how you learn.

Well, your photo isn't great to begin with. We've got to get this right in-camera, so some tips:
Try a warmer light, like from a window, and diffuse it with a curtain or wax paper.
You need a good setting. I don't know what you make mochi on, but if it can involve a wooden cutting board then put it on there. The rich browns work well.
Take a photo of the mochi, and then also a photo of the mochi with something white like a paper towel next to it so you can get your white balance right, though to be honest you'll be better off making the balance a tad warmer anyway.
Add some colors that work well with the mochi, perhaps by placing something near it that you would use with mochi. Like the wooden cutting board, or I guess fruits, or differently colored mochi.
Take photos of the process of making mochi, people like to see how things are made. Don't forget to follow the other guidelines though with color and light.
Right now the lighting looks very cold and flat and unflattering, and the mochi isn't presented well either. Perhaps you could form it into a cleaner mound. Look at some food photos, think about what you can do in real life to copy it, and not just what you can do in post.
A good first step would be actually making a mochi that doesn't look like a dried up placenta

Try shooting in a more controlled environment. Turn that overhead light off and move the table more towards the window. Cut the blinds so they make the light a bit softer. If you are seriously attempting these as professional shots then I'd put a clear shower curtain over the window to diffuse the light. if you have a better table to use, then use it, because that wood does not look very good.
Also your composition is shite m8. I would take a photo of just the handguns and then the rifles separate so you can get everything in frame.

Agreeing with everything here. The lighting is very harsh and unappealing. The biggest detractor for me though, is that both the rifles extend well past the edge of the frame. If they're the subject, then they should probably be in the frame, unless you have a particular artistic vision justifying why it wouldn't be.
I've used a Nikon D60 for a long time and no. If you can get it for like $20 that's fine but not only is it a really old DSLR, it's a really old beginner's DSLR with many features just cut away.
It's missing some sort of drive motor for using autofocus on most lenses, the viewfinder will likely be completely useless for manual focusing which you will have to use due to the autofocus issue unless they're giving you a lens that works with it, you'll need a specific type of lens in order to get exposure metering, don't remember which since I never got one. It takes a fairly small photo with poor dynamic range, bad color, and abysmal ISO performance by today's standards, or even the standards of 2012. Chances are you'll be at ISO 100 shooting full manual and missing focus due to the viewfinder, but you can buy a new prism for the viewfinder and learn to get good at fully manual shooting. If it's real cheap you might as well get it so you have a camera while saving up for something better.

Yes you don't get autofocus with OLD lenses, but its not just D60 that lacks that. The entire MODERN range of low end Nikon DSLRs lacks this function. Nobody except>>2962221 shoots full manual and does manual focus on D60. You don't need a "specific" lens. Anything made in the past decade by Nikon will do. Don't listen to this frankly crazy advice. Bying a new prism(i think he ment focusing screen) is a complete nonsense, on this camera at least.
Yes viewfinder is on the small side, but again, its not just D60, its the entire range of entry level DSLRs.
No, 10MP is not a "fairly small photo". Its more then enough resolution for a beginner. Also, cheap zoom lenses don't resolve much detail. If you want to get the most out of higher res sensor, you need sharp(usually expensive) lenses too.
Dynamic range is not great by todays standards, but Canon is selling cameras with exactly the same dynamic range today. You will get around 2 stops more if you buy a new camera, its really not a huge difference. I think D60 has around 11 stops of dynamic range which is ok.
