Honestly, OP, I would do it. I personally think that the 350z is a fun car, with a nice, simplistic interior that is fun to drive. It's quick, handles well, and has a lot of good driver feedback. Despite the memes, it's a genuinely fun car.

If you are worrying about the paint/clear coat while rallying your car, you are doing it wrong. All of it. Very wrong.

With proper suspension, wheels and tires, and underbody protection, any car is rallyable. My only concern with the EP3 is that I used to have one, and the rear end broke loose too easily. It was pretty good at staying firm, but when it broke loose, you were fucked. I'd argue that is not something you want in rally unless you could set up the suspension to be more controllable while sideways.

Nibba, you ever watch rally? Stone chips in paint and on windshield, loose bumpers and the like are everyday life of a rally car. Hell, some dont even have paint to Save weight.
