Engineering explained was nice, but now it has covered pretty much all the basics and should move on to more complex stuff.
Doug de Muro is meh.
Regular car guy reviews are dank.
VisioRacer is shit, especially for the voiceovers, but made me find out about some nice pieces of motoring.
Rob Ferretti is a cool guy and actually lives with the cars so he knows his stuff.

Used to been Saabkyle04, I would watch his vids to get insight on certain few cars. Now he just reviews cars that the white collar worker with a good yearly salary can afford, sports cars, or some other cars I don't really care for. Kinda wish he brought back his diversity thing reviewing cars of different classes, i.e. Sedan, Sports, Crossover, SUV, Pickup, etc..

There is a part of me that wants to sell my current car and buy one of these.

My dad has had multiple aircooled Volkswagens before and he's said he would be confident doing any mechanical work on one including an engine rebuild.

What issues should I be expecting to come upon?

Don't do it until you can afford both cars. Unless you're pretty dedicated. Then go for it , a 60s VW can be a happy daily driver. It can be a bit of a heart break as well, but not many cars do that to you.

Issues, over priced, hidden rot, often poorly looked after, poor 'upgrades', bad paint jobs, cruddy chicken wire and filler 'welding', all the usual bullshit with an old car.

The very very best is a nearly as close to stock not too cut up solid original air-cooled type 1. Once you've a solid bug most other problems (engine, mechanics, etc.) are not that big a deal.

Say $4500 to $7,500 for a clean stock bug? Sounds reasonable.

Restored beetles, check up on the workshop, take someone who might spot bad work. I've found with even a very very well restored bug, they start rusting again quite quickly. More so than a normal original. Lower quality parts and inferior to factory paint job mean that spending $10,000 on a restoration, seven years later they look really sad again if they see a lot of road use. You rarely get your money back on the re-sale either. Hmmmm, best that you're idealistic to go through all this.

Right, you've bought one. Every 3,000 miles or 3 months you have to adjust the brake shoes and change the oil. They are high maintenance or they become a poor drive. The shoe brakes on a vintage beetle are not self adjusting. Aftermarket discs conversions are easy to get these days , I don't know if they are good quality or made of plastic, but I'd add it to your budget. The shoe brakes on beetles are awful.

The engines are really good (if they are not totally knackered out). If it's a fresh well looked after engine even the 1200, it should quite happily do its best for you. Like a well meaning lawn mower, it'll become your friend.

They are great at night with the round dash light, it's like you could be flying a bomber over Berlin, it really feels like it sometime as you yaw around a round-a-bout.

Change oil and keep the valves adjusted, and it keeps chugging. All of the work to be done on them is about the easiest I have ever done. I started on a bug, it taught me a lot.

How the fuck does manual work?

Do I move up a number every time I want to increase the range I want my car's RPM to be at, or do I go down a number?

Its the same way your automatic 6 speed works

you drive the car, the more gas you put into it the higher the RPM's go. When the car (or you) sees that its time to shift it shifts up to the next gear and the RPM's drop. Its literally backwards for slowing down

Anon, it still doesn't really make sense.

What happens when you get to 5th gear and you want to keep increasing the RPM? Where do you go from there?

So if I start off on 1st gear, and I'm driving and the RPM gets to say 3k, do I have to move it up to 2nd gear? What happens if I leave it at 1st gear? Will the RPM just keep going up, or will it stay on 3k? Do I have to move it so second gear for it to go up to 4k RPM so that my car can go faster?

Just got back from the mechanic with my Honda prelude and apparently the previous owner removed the catalytic converters. Now the mechanic is refusing to do my tranny service because he wants me to go to a wrecker and buy some cats to put on it because he says it's illegal and he might report me if I don't put them back on. The fuck do I do now? He has my registration and I don't want to pay for that shit. Is this blackmail?

What's the key to achieving that smooth, "riding on a cloud" experience? I don't race or anything, but I rarely obey speed limits and a car that handles well is important to me. I feel like most coilovers, bars, and braces aid in making your suspension more rigid and responsive, but I don't want my highway cruises to feel like I'm on a dirt road, and I don't want road reflectors or speed bumps to jolt me out of my seat. What's more important to me than good cornering is a luxurious ride. What modifications do you make to achieve this?
