So what causes someone to end up purchasing a spider? I can only imagine that their thought process goes along the lines of "hey I'd like to ride a motorcycle, except I don't want any of the things that makes motorcycles cool." So why do these things exist?

I'd imagine it's faster and more fun to ride than a similarly priced car, and if you live somewhere where filtering is illegal you don't lose one of the biggest advantages of motorbikes. As for why you'd choose it over a motorbike, it's going to be safer for an inexperienced rider.
Know of someone who bought one when his knees gave up and could no longer balance his hog.

3 wheel vehicles are legally motorcycles and require a motorcycle license.

not everywhere
in Dutchland, not a long time a ago, you could ride 3 wheeled motorcycles with just a car driver's license

Same in the UK, or at least it use to be. A relative of mine used to drive a Reliant Robin as he only ever had a motorcycle licence. Also you're not required to wear a helmet just like with a quad.
