I've got a Dutch style single speed bike with sit up and beg/high handlebars but I want to change them because I feel my ride could be significantly more comfortable if I had multiple hand position options. I don't like drop bars so I don't consider that an an option and prior to this bike I rode on straight bars.
I am considering getting butterfly/trekking bars and seeing how I get on with those. The longest journey I'll take is a 18-20 mile round trip but that only rarely

used them a long time ago for same reason you want them -assumed more positions would be more comfortable

Pretty much. The average pleasure cyclist pleb struggles to go 20kph, if you can't handle a crash at those speeds you should probably wear a helmet when you run, get into the shower or walk on ice. There IS a proper way to fall, your head shouldn't be touching the ground when you fall, even with a helmet. A good set of traps will do more than a helmet at low speeds. Watch some MotoGP races for examples of how to fall properly.
I personally wear one when I'm going hard but not when I go get groceries, Just putting that out there before I trigger somebody.

For example, if someone is biking on a flat road, how fast should they be going? Uphill? Downhill?
When I go down my hill on my commute I hit 35-40 MPH, but on the way back UP it I only go between 7-8 MPH.
I ride on this flat section and was going like 16-18 MPH on a road bike, and this older Asian guy on this mountain bike who I passed downhill went past me like I was standing still and I felt like shit getting passed like that and like I suck at riding

OP, a bike messenger might even ride more than 100 miles in a day (not that you'd know that, not even owning a bike yourself -- post yours WITH TIMESTAMP, by the way; having some demonstrable credibility when trolling is a basic requirement) but the difference between a purely recreational rider out for a 100-mile organized event and a bike messenger, is the recreational rider is riding the entire distance with only a few (or no) breaks at all, and the bike messenger is doing many short rides all day long. The recreational rider will finish his route in 6 to 7 hours, typically, and the bike messenger may spend 8 or more hours doing the same. The many breaks from riding the messenger takes makes all the difference in the world. Also the messenger, with all those breaks, has more opportunity to take in calories of all different types, including heavier foods that the recreational rider would be stupid to eat, riding longer distances.

It's an issue where both sides see very high societal costs. One where the intuitive choice is horribly wrong. It leads to uninformed people having a very strong "common sense" opinion with lots of ethos and getting very angry at more informed people, believing them them to be evil people who want people dead and injured.

I live within a block of where this thing is supposed to go and I think it's one of the stupidest things ever. Not only does the city waste tons of money on mostly useless ferries, they'll parallel that with an even more senseless streetcar. For a fraction of the cost they could:
1. Extend the G to at least Queens Plaza
2. Build a Bike/Ped/Bus bridge from Manhattan Ave to Vernon Blvd
3. Put in some kind of circulator bus from Smith 9th St, around Red Hook, to Cobble Hill/Bergen St.
If this were really about improving transit along the corridor, that's what they would do. But this city loves to bend over eagerly for developers.
