Partly that. Partly for manufacturers to get people to "upgrade" to 1x and buy more stuff. Partly because, with wide cassette ranges, front derailleurs aren't really needed, and having a 1x setup allows for more smooth shifting.
Imagine if you're running 2x11, you're in your small chainring and 4th smallest cog, you want to upshift. Going to 3rd smallest cog is getting into crosschaining area. Going to big chainring will be a really big jump, probably bigger than you want. So now you have to switch to your big chainring, while also shifting to a bigger cog. That's two shifts instead of just one on a 1x system.
tl;dr 1x is smoother shifting, so it's the best option IF you can get your ideal gear range with 1x. But there's nothing wrong with 2x or 3x.

At my country (Spain), there is a luxury train, the Al Andalus, it's not a transportation train, it's a turistic one, you can get one ticket for 3.500+ euro, and you will travel through the country for 6-7 days. No. 21 is narrow, 23 is medium, 25 is wide. Yeah some people use 28 but that's mostly for endurance road bikes and gravel bikes and such, and people use narrower than 21 too. 21-25 is the standard range. And if your opinion differs from mine on this subject then you are objectively wrong. That said, I think you misunderstood OP. I think he meant that he would have wide enough clearance to run tires wider than 25 but would generally run 25.
Why arent there more used bike shops?
It seems like a perfect business model since bikes lose so much value so quickly. I want to buy a used bike but need to test ride a bunch to figure out what I might need. I feel like someone could make a lot of money doing this in denver where everyone has multiple bikes.

There are some that are worth buying, mainly the high end ones. At lower price points it makes more sense to build your own, it's more cost efficient and you get more control over component choices so you don't end up with something like a department store bike with a motor slapped on it.
It's fairly easy to do with plenty of full kits available and the cost can be fairly low at under £400 for a lower powered conversion (250-500w). My "500w" bike cost me around £800 with about a 50/50 split between the electric kit and the rest of the bike.
