Should I go for a Specialized Allez Comp (2015) with Factory-Brakes and Shimano 105 for 1200€ or go one step below to the Tiagra/Sora-territory for lets say 700-900€? Are there great differences in riding, or is it just brainwashing? Would the Specialized be worth the money?
Get a used bike for half the money and use the rest to fit it to your style and needs.
I don't know anyone who bought a factory bike and did not end up replacing stock components.

Get the cheaper one and beat the hell out of it. If you get really strong on it and want to compete, compete with it. Then if you like that, spend the big money on a full carbon ultegra roadie
Although note it's not all about groupset. The quality of the wheels is important. Most bikes also need their tires and saddles replaced, but some higher price models come with stock tires that are good enough to use
105 is the benchmark and that's the one I'd go for but I wouldn't rule out the Tiagra if the crankset suited my needs better.
For example, if the Tiagra was a compact and I lived in the hills then I'd seriously consider the Tiagra, if those were my only options.
But I'd much prefer 105 for smoother shifting and less weight.
But better components could be more attractive to theives if you plan on using it for commuting.

Has anybody tried these baskets? I want to improve my bike's carrying capacity, but those panniers seem too expressive for my wallet and taste. I'm not planning any long touring trips for a while, I just want some to carry groceries and other stuff.
The Amazon reviews are mixed, with some complaining of the baskets rattling and not being easy to close.

I know that a bike is supposed to be high enough that your leg is almost extended at the bottom of the movement. But is that mainly to be able to exert maximal force? Or is it also important for not fucking up your joints / muscle balance / etc?
After some theft and vandalism issues I'm considering switching to the local rental bike system for my commutes, but I'm a pretty big guy (195 cm) so the bikes aren't big enough for me. Even when the saddle is raised to max height, I reckon it's still at least 10 cm too short to reach the "ideal" position.
I just did a 20K trial ride, and my knees felt kinda "wrong". Not real pain, so I reckon it's theoretically possible that I just need to get used to riding like this and eventually it'll feel normal etc. I also noticed that I was even slower than usual (15ish KPH instead of 18ish), but if that's the only downside I don't really mind.
But I don't want to fuck anything up. And if continuing like this is a bad idea, I would just like to find an alternate solution straight away... (which would probably entail buying a second-hand bike and arranging a safer parking spot in an apartment building nearby).
Some extra info if it matters : I don't have a lot of biking experience (only learned to ride this year). I'm 33. Regular commute is 30K one-way. I traditionally used my bike about one day per week, but I would ideally like to increase that.

Riding with the saddle too low is bad for your knees and horribly inefficient. If you're doing that commute twice a day it's 300k per week, so any issues are likely to be exacerbated pretty quickly. I can notice if my saddle is 3 or 4mm lower than normal...

Get a real beater that looks awful but rides well. Tape up your saddle to make it look damaged. It'll probably be cheaper in the end than renting, anyway.

I just moved to a city where the most efficient mode of transport is cycling. I bought myself a cheap second hand bike and have found myself using it almost every day, so now I'm looking g to upgrade.
I have decided that a cyclocross bike would suit my needs best. I am currently looking at pic related (Reid Granite 2.0) If anyone could advise me on whether or not this bike is worthwhile, or if there is anything better in the <$1000AUD price range I'd love to hear from you. The Granite 1.0 is also a couple hundred cheaper, so that would be a great option if it's not too far inferior.

I wouldn't buy a Reid, I tried one about 4 years ago and it looked all sorts of shit. Bad welds, crap components etc.
They may have gotten a lot better in the last few years but I would get a more well known brand.

If you're commuting, a bike must have a rear rack and fenders. Start there.
I have that exact bike. Would not recommend, but for reasons that aren't immediately noticeable.
The components are pretty good value for money and the frames are decent nowadays (must've changed factory or something). However, I wouldn't recommend because the stores have shit service and shit mechanics.
If you go to a local bike shop you'll at least get a rough fit, at Reid they just ask you how tall you are. And a decent fit does more for comfort than any component ever could.
The Reid mechanics are not very good, their free services are basically just putting lube on the chain and the bikes aren't well set up upon leaving the store either.
Go to the local bike shops that sell the big brands and ride a few of their entry level cross/gravel bikes. It will certainly be a better decision that the Reid.
If you already knew your measurements and could set up your own fit on the Reid and don't mind doing all your own maintenance, it could perhaps save you some money. But you'd be better off spending an extra $200 for all the extras you get with a genuine bike shop. Also, most bike shops will be happy to haggle, but I found Reid prices were much more firm.

OP, there are lots of options when it comes to dressing to deal with cold weather, but the best items for cycling in the cold are windproof and fit closely enough that they don't flap around in the wind as you ride. If I'm going out for a ride (for exercise) in cold weather, I'm going to wear the same things as usual (bike shorts, jersey), but I'll switch to a wool cap, wool socks, and I'll wear a jacket and tights on my legs.
