How has classical music managed to last 1500 years doing the same thing over and over again with more meaningless subgenre labels like medieval, renaissance, baroque, romantic, modern, contemporary?

At least OP has the benefit of rock following the rigid guitarists, drummer, vocalist (sometimes keyboard setup) whereas classical is from choirs to full orchestras.

Just as rock is usually set on stone to have a combination of drums, guitars, basses, vocalists, among others, and any combinations or variations of these, so is classical music set on stone to have vocalists, violins, violas, cellos, double basses, percussion, among many others, and any combinations or variations of these.
The difference is that is what rock is.
Unlike Western Art Music which is anything from solo piano to full orchestras.
