You could figure out the key of a song by transcribing the vocal melody, but once you're at that point the scales used for the melody should be easy to figure out. Use and instrument to play the melody and then see if your hand remains within a particular scale box. Idk, I don't think that thinking of vocal melodies in terms of scales is particularly helpful.

Sure, as long as the vocals aren't super simple and are more than a few repeated notes

Intervals and context. Know the intervals of various scales. Listen for the tonic (the note the scale is based on and brings a feeling of resolution)
But really you should just be able to hear right away what the scale is without separating parts or even identifying notes. Learn about a bunch of scales and modes and familiarize yourself with their specific sounds and feelings and know the intervals
