When Try aired I started to care less, G-Reco could have been better (nowhere near as nonsensical as Anime Suki deludes into thinking it is), and IBO is literally worst entry. Did like Thunderbolt though.

Other than the asymmetrical funnels, what is the appeal of the Nu Gundam's design? It's your typical bland UC lead Gundam.

That is the appeal. It looks simple and kickass, not like an over-designed plastic toy.
The color scheme is also significantly less eye-cancer inducing in comparison with the classical bright blue one.
I don't really like the funnels. but I like the more angular design, over the original blocky, plus it has a normal backback over the Zeta's stupid thing. The double v-fin is nice, too. Ikinda think of the Nu as the UC lead Gundam, like the others are bland concept are, but this finalized the design
Kiryuu, Misaki, Hoshina and Yamazaki get kicked off the Yamato (story-wise they have to get off to let it launch, and can't get back on).
Kiryuu has no lines and all of Misaki's line are "Hoshina-kun" and nothing else.
Harada isn't even invited to get on the ship (though that IS because Fukui gave her infant son space cancer)
I think Fukui didn't like the remake's new characters very much.

The only new characters from 2199 with any real screentime in this so far are Akira and that girl with long black hair who replaced Yuki when she was kidnapped on the bridge in 2199.

On how this whole thing came together:

Why it’s on the 3DS and not the Switch:

That lent itself so well to the map screen functionality that I’ve been wanting to put into the game that we hadn’t seen before, the ability to have the map screen always on. Does ZZ need to be watched before CCA?
From what i understand, there's very little that the main cast of either has to do with one another and circumstantially it's obvious that AXIS has to lose it's leader for the events of CCA to happen.
Don't get me wrong, i like ZZ but if it's not required to view CCA then I wad by to go ahead and watch the later while I'm fresh off of Zeta.

Very little of Gundam is necessary to watch any of the other entries. Wing is necessary to watch before Endless Waltz, and 00 before A Wakening of the Trailblazer for instance, but no series is necessary to see before another series since they all essentially start fresh and fill in any backstory needed for new viewers.
Watching older entries rewards you with better understanding and small references, but it's not actually necessary. If you wanna skip ZZ for now and watch Char's Counterattack you really won't miss anything, same as you wouldn't miss much jumping from 0079 to Char's Counterattack or watching Victory as your first show.
