What exactly is the point of poems that don't rhyme? Trying to get into poetry and I'm struggling with this.

It's about metric foot and holding rhythm. When not focusing on rhyme, rhythm and meter become absolutely key in keeping time. So, I'm sure you've heard the term "iambic" before. When using the iambic metric foot, you're alternating between an unstressed syllable and a stressed syllable, in that order.

So in this example there are four iambs per line:
>be-cause I-could not-stop for-death
and so this poem would be considered "iambic tetra meter"with some trimeter. "Tetrameter" just means there are four uses of the metric foot--iambs--per line.
Should this poem not rhyme--though it does--it would contain the underlying metric foot which then holds its place.
Meter may be subtle, or deliberately used to establish a theme through rhythm.
Take Lord Byron's 'The Destruction of Sennacherib'. It rhymes, but it also uses the anapaest metric foot of "soft-soft-hard" to establish a rhythmic similarity to the gallop of horses depicted within the poem itself.
TL;DR: The point of poems which don't rhyme are to establish underlying rhythms as their motif; usually to exemplify the ideas in the poem.

I have never read books in my life, and in school I despised the mere thought of reading them. But as I've grown older, I've grown more bored but at the same time less sporadic. I still dislike literature, but I wouldn't mind reading something that would give me a sense of self improvement upon reading it. Something philosophical or psychological, or overall life improving.

Adding to my previous statement, maybe it was the fault of my education system, but I've been forced to read really boring non-fiction works of my eastern european country throughout all of middleschool and late highschool as well as greek epics like Homer which I was never really interested in, and the only thing that could have any semblance of interest like Jung, Nietzsche, or fiction like Kafka was only lightly mentioned throughout my final high school courses, at which point I already despised the idea of reading.

There are beautiful and really emotionally uncanny, haunting descriptions of (God, I hate to say it because of every faggot on /lit/ who feels obliged to say "DUDE WEED LMAO HAVE FUN FRYING YOUR BRAIN DUDE" whenever someone mentions psychs or drugs) drug trips on peyote and jimsonweed and mushrooms and stuff. Also some really weird and strangely touching shamanistic beliefs, and the constant interplay between Don Juan's coolness and lucidity and Castaneda's own self-admitted histrionicity, insincerity, and inability to grasp certain concepts is weirdly satisfying and touching as well; the books, if nothing else, are the most complete admissions of humility I've ever read.
Warning though, the more you read Castaneda the harder it becomes not to believe that he was writing bullshit at times, or even during all of it (i.e. that Don Juan doesn't exist). But this is bullshit that has, so to speak, a certain odd resonance to it, and some kernels of truth in it to be sifted out. I've even had the weird sensation at some times that Castaneda was an alias, or something other than what he was pretending to be, and purposely disseminating esoteric/mystical information on behalf of some group (a Native American shaman or group of shamans he found?) in a veiled form.
If nothing else, no one can deny that the themes it presents of always remembering one's death, of taking responsibility for one's actions, etc., are well presented and are meaningful.

My understanding of how Lavey satanism works is that it is basically edgy as fuck atheism, with a moral code like a religion.
